6 oz spaghetti
2 Tbsp. butter
1/3 cup Parmesan cheese, grated
2 eggs, well-beaten
1 cup (8oz) cottage cheese
1 pound ground beef or sausage
1/2 cup onion chopped
1/4 cup ground pepper
1 can spaghetti sauce
1/2 cup mozzarella cheese, shredded
Cook spaghetti; drain (should be about 3 cups). Stir butter into hot spaghetti; add Parmesan cheese and eggs. Form mixture into "crust" in buttered 10" pie plate. Spread cottage cheese over bottom of crust.
In skillet, cook meat, drain, add sauce and heat through. Put into spaghetti crust.
Bake uncovered at 350 degrees for about 20 minutes. Sprinkle mozzarella cheese on top, bake 5 more minutes, until cheese melts.
This recipe was given to me by one of my many "moms," Eileen, at my Bridal Shower. I used to babysit her kids, Cami & Johnny when they were little. I even went to Hawaii and Florida with them to help "babysit" the kids.
