3 cups chopped apples
3 cups sifted flour
1 tsp. baking soda
1 tsp. salt
1 cup walnuts (optional)
2 tsp. vanilla
1 tsp. cinnamon
2 cups sugar
2 eggs
1 cup oil
Sift dry ingredients, add oil and eggs. Fold in vanilla, nuts, and chopped apples. Fill greased and floured 13x9 pan.
Bake at 325 degrees for 1 hour, until golden brown.
I love this cake! It's perfect for fall, especially in Washington! I've even made this cake in the classroom with my 2nd graders in the fall when we talk about apples and Johnny Appleseed.
